Event Chef/Party Captain: Walter Burke Catering, Santa Fe, NM 2002–2013
Managed party kitchen staff, cooked and coordinated timing of meal service. This included plate presentations and buffet decor. Collaborated with event planners and clients alike. Events included highly personalized weddings, boutique dinner services in private homes, and large scale galas. Also worked with Bon Appetit at The Santa Fe Opera, Marja’s Custom Catering, Casa Nova Catering and The Cowgirl Hall of Fame.

Special event chef with locations in the San Francisco Bay area. Assisted in the execution of Google Galas and lunch trucks for their Silicon Valley employees. Retreat Chef
Location Chef/Cooking Teacher: Villa Lina Agritourismo, Ronciglione. Italy 2006–2008
Instructed American tourists in Italy in regional cooking on a farm estate with emphasis on my Italian background and family heritage. Designed meals and lessons plans based on connections with local farmers. I interacted with them daily to incorporate their offerings into our workshops and meals. I executed “family style” dinners for 20 students and staff in the evening from the lessons of the day.

Location Retreat Chef: Mountain Spirit Lodge Hunting Lodge, Chromo, CO 2003–2004 Created and prepared all menus and meals for an elite group of elk hunters during hunting season. Menu eccentricities included bear stew, elk smoked sausage, and bison sliders
